Ingredients:Pork (200 g or 5 oz), Mushroom (a few, soaked in hot water), white part of green onion (1 oz), garlic (a couple of cloves), ginger (a small piece), one egg.
Spices:A) one tablespoon of Soy Sauce, two tablespoons of corn starch, one tablespoon of cooking oil, egg white. B) one tablespoon of Soy Sauce, half a teaspoon of salt, one teaspoon sugar, one tablespoon vinegar, one teaspoon of sesame oil, two tablespoon cornstarch, one teaspoon hot sauce (chili oil).
Procedure:1) Julienne pork into stripes of 3 mm thick (across the grain) and 5 cm long. Marinate pork in A).
2) Soak mushroom in hot water and julienne. Chopped up green onion (white part), and mince garlic and ginger.
3) Heat up wok and add cooking oil, cook pork until it is 80% done. Drain.
4) Add one tablespoon cooking oil to a clean wok. Add minced ginger and garlic.
5) Add pork together with A) and B), plus green onion. Cook until done.
