    Chili Oil
    Fry crushed chili pods in 1 cup of vegetable oil
    Add ginger and/or onion
    Allow to cool before serving


    Chili Sauce-
    Garlic
    Red Chili peppers
    Soybeans
    Sesame oil


    Five Spice Powder-
    teaspoon Chinese five spice powder
    2 tablespoons salt
    Combine above in a skillet over moderate heat.


    Five Spice Sauce-
    5 cardamom seeds
    teaspoon whole cloves
    1 teaspoon fennel seed
    1 teaspoon Sichuan peppercorns
    6 star anise
    2 pieces preserved tangerine peel
    Cinnamon

    1.5 cups dark soy sauce
    cup sugar
    Sesame oil


    Ginger Sauce-
    Combine cup red vinegar with
    1 teaspoon minced ginger


    Hoisin Sauce-
    Flour
    Soybeans
    Vinegar


    Hot and Spicy Sauce
    1 teaspoon chili oil
    1 clove garlic, minced
    1 minced green onion (white part)
    3 tablespoon soy sauce
    teaspoon sugar
    Sesame oil
    Sichuan Peppercorns


    Hot Mustard Sauce
    5 tablespoon of hot mustard powder
    Vegetable oil
    Water


    Peking Duck Sauce
    This is basically Hoisin sauce with sesame oil and sugar to taste.


    Plum Sauce
    Plum juice
    Chili Pepper
    Sugar
    Vinegar


    Pong-Pong Sauce
    1 teaspoon chili oil
    1 clove minced garlic
    teaspoon minced ginger
    1 green onion (white part) minced
    1 tablespoon peanut butter paste (or sesame seed paste)
    teaspoon sesame oil
    2 tablespoons soy sauce
    teaspoon sugar
    1 teaspoon red vinegar


    Sichuan Peppercorn
    Mix five portions of salt with one portion of ground Sichuan peppercorn in a skillet over moderate heat for 5 minutes.



    Sichuan Peppercorn Salt
    Heat up Sichuan Peppercorn in a skillet over moderate heat for 5 minutes. Shake skillet while cooking to agitate contents. Cool peppercorn and grind in a pepper mill.


    Sweet and Sour Sauce
    1 medium size Ginger
    1 cup Ketchup
    Juice from one Lemon
    Juice from one Orange
    1 medium size Ginger
    Salt to taste
    1 cup Sugar
    cup white Vinegar
    2 cups water

    mix all ingredients in a skillet and bring contents to a boil. Let simmer for 5 minutes. Allow to cool before serving.
