Ingredients:Mutton (200 grams), five eggs, water chestnuts (40 grams), cucumber (40 grams), sesame (60 grams), peanut oil (500 grams), cornstarch (10 grams), flour (50 grams)
Spices:Sesame oil (15 grams), MSG (1.5 grams), minced green onion (10 grams), minced ginger (10 grams), salt to taste.
Procedure:1) Dice mutton, cucumber and water chestnuts into 3 mm cubes. Add sesame oil, MSG, egg and flour and mix well in a bowl.
2) Beat eggs in a separate bowl and add cornstarch solution. Heat up a pan and add oil. Pour fraction of the egg solution into the pan. Add contents of 1) and form an omelet by pouring more egg solution on top.
3) Paint one side of the omelet with left-over egg solution from 2) and sprinkle sesame seeds evenly on top.
4) Turn omelet upside down and repeat step 3) for the other side.
5) Fry omelet in hot oil until golden brown. Cut into strips of half-inch width and serve.
