Ingredient:Two crabs, four eggs, three black mushrooms, half a green bell pepper, two red peppers, two green onions, one piece of ginger, one tablespoon of cooking wine.
Spices:a) Salt (1 teaspoon), MSG (1/2 teaspoon, optional), chicken broth (1 cup). b) Salt (1 teaspoon), MSG (1.5 teaspoon), cooking wine (1 tablespoon), white pepper powder (1 teaspoon), cornstarch (1.5 teaspoon), chicken broth (1/2 cup).
Procedure:1) Chop up and clean crabs. Soak mushrooms in hot water. Julienne mushrooms, green and red peppers.
2) Place crabs on a plate. Add green onion, ginger, cooking wine. Steam at high heat for 10 minutes.
3) Beat up eggs and put on a large bowl. Add spices a). Steam at high heat for 5 minutes and low heat for another 10 minutes.
4) Arrange crabs on top of the steamed eggs. Discard green onion, and ginger.
5) Heat up wok and add one tablespoon of cooking oil. Add mushrooms, green and red peppers. Add spices b) and cook. Pour on top of crabs and serve.
