Ingredient:Scallop (100 grams), sea cucumber (100 grams), ham (50 grams), shrimp (50 grams), one whole chicken (1000 grams), bamboo shoots (70 grams), mushrooms (100 grams), 12 quail eggs.
Spices:Soy sauce (40 grams), cooking wine (80 grams), salt (5 grams), shrimp eggs (5 grams, optional), MSG (10 grams), sesame oil (15 grams), cornstarch solution (50 grams), ginger, green onion, chicken broth.
Procedure:1) Clean and cook chicken in water with cooking wine, ginger and green onion. Drain and set aside.
2) Dice sea cucumber, ham, mushroom and bamboo shoots.
3) Mix scallop and shrimp with cornstarch. Mince ginger and green onion. Heat up wok and add three tablespoon of oil. Stir-fry ginger and green onion. Add a bit of broth, shrimp eggs, salt, soy sauce and cooking wine. Add cornstarch solution to thicken the sauce. Add sesame oil. Set aside.
4) Put chicken in a big container (see picture). Add contents from 2). Add ginger, green onion, cooking wine, salt and steam for one and a half hour. Garnish with quail eggs, and add contents in 3). Serve.
